Pork Mechado or Filipino Pork Stew

That Tender Pork that melts in your mouth, with

Servings: 4 – 5 people

Time to Prepare: 10 minutes

Time of Cooking: 2 hours for Manual Cooking/ 30-40 minutes with Pressure Cooker

Ingredients:

  • 500g of Pork Cubes  ————–——-– $2.20/ Php 110
  • 1/2 Onion (Diced) ———————-—-$0.10/ Php 5.00
  • 1 Potato (Diced)—————————––$0.20/ Php 10.00
  • 1 Carrot (Diced) —————————–$0.10/ Php 5.00
  • 1/2 cup Soy sauce ———————-—–$0.04/ Php 2.00
  • 2 Tablespoon Tomato Paste ——-——$0.14/ Php 7.00
  • 2 Teaspoon Sugar ——————-——-$0.10/ Php 5.00
  • Salt —————————-————–—–$0.10/ Php 5.00
  • Pepper ——————————————–$0.10/ Php 5.00
  • 2 Cloves Garlic (Chopped) —————-$0.10/ Php 5.00
  • 2 Tablespoon of Oil ————————–$0.10/ Php 5.00
  • 1.5L Water
  • 3 Pieces Hotdog (Optional)

Instructions

Preparation:

  1. Defrost the Pork Cubes if Frozen.
  2. Diced the Onion, Potato and Carrots.
  3. Put Carrots and Potato in a bowl of water to remain fresh.
  4. Chop the 2 Cloves of Garlic to bits.
  5. Slice 3 Pieces of Hotdog diagonally (Optional)

Cooking:

  1. Put the Pan into Medium Heat and add 2 Tablespoon of Oil.
  2. When Pan is hot, add Chopped Garlic and Diced Onion.
    • Saute so that Garlic will not be burnt.
  3. Add the Pork and saute for 3 to 5 minutes until it is lightly cooked.
  4. Add the 1/2 cup Soy Sauce.
  5. Add the 2 Tablespoon of Tomato Paste and 2 Teaspoon of Sugar and Mix for 5 minutes.
  6. Add 1.5 Liter of Water and Let it cook for 1 hour and 30 minutes to 2 hours. (For pressure cooker just 20 to 30 minutes)
  7. After 1 hour check if there is still water and check for the tenderness of the Pork.
    • You can add 1L of water more to make it very tender and let it cook for another 30 minutes to 1 hour.
  8. If you think the Pork is almost tender, Add the Potato and Carrots and Let it cook for 15 minutes more.
  9. Add the Hotdogs (Optional) and let it simmer for 10 minutes.

Plating:

  1. Plate it with hot rice paired with a Sunny side Egg.

Crunchy Fish Fillet

 

Something Crunchy and Lite For Sunday Lunch!


Servings: 3 people

Time to Prepare: 30 minutes

Time of Cooking: 15 minutes

Ingredients:

  • 500g of Cream Dory Fillet ————-– $1.95/ Php 97.50
  • 1/2 Cup of Flour ————————-—-$0.20/ Php 10.00
  • 1 and 1/2 Cup of Bread Crumbs——–$0.30/ Php 15.00
  • 1 Egg ——————————————–$0.12/ Php 6.00
  • 30ml of Milk —————————-—–$0.12/ Php 6.00
  • 1 and 1/2 Cup of Cooking Oil —-——$0.20/ Php 10.00
  • Salt ————————————-——-$0.10/ Php 5.00
  • Pepper ———————————–—–$0.10/ Php 5.00
  • 1 Tablespoon Mayonaisse ————–$0.20/ Php 10.00
  • 1 Tablespoon Ketchup ——————-$0.10/ Php 5.00

Instructions

Preparation:

  1. Defrost the Cream Dory Fillet if Frozen.
  2. Cut 500g Cream Dory Fish Fillet vertically into half and drain excess water.
  3. Into one bowl, mix one Egg and the 30ml of Milk and beat until it get mixed together.
  4. Into a separate bowl, put 1/2 cup of Flour, a pinch of Salt and Pepper and mix.
  5. Into another Separate plate put 1 and 1/2 cup Bread crumbs.

Breading:

  1. Place a slice of Fish fillet into the flour bowl. Cover the fish with flour.
  2. Then place the Fish covered with flour into the Egg Wash and cover all sides with it.
  3. Then place it into the breadcrumbs plate. Try to mash the fish gently with your palm so that the crumbs will stick into the Fish well.
  4. Redo the steps to all the slices of Fish and put it into a plate.
  5. Place the Uncooked Breaded Fish fillet into the refrigerator for around 10 to 15 minutes.

Frying:

  1. After 10 minutes put the plate of breaded Fish fillet out of the refrigerator.
  2. Place Frying Pan into the stove and into high heat.
  3. Place 2 cups of Cooking Oil into the Pan. Wait until the Oil is hot enough to Fry.
    • Try to put some breadcrumbs into the Oil, if it is bubbling and frying, it means Oil is ready for cooking.
  4. Place a slice of breaded fish into the pan one by one. Turn each sides after 2 to 3 minutes per side.
    • If the Oil is too hot, lower the heat into medium.
  5. Wait until the color of the fish is Golden.
  6. Place into a place with napkins to drain excess oil.

Sauce:

  1. Just mix the 1 tablespoon Mayonnaise and 1 tablespoon Ketchup.

Plating:

  1. Choice to plate it with a Salad or Rice.

Garlic Shrimp Pasta with Cream

This is one of those Lazy cooking turned right! I cooked this barely for dinner since I want something simple to eat! It is easy to cook and very affordable!

  • 100g of Small Peeled Shrimp —– $0.75/ Php 37.00
  • 400g of Pasta Spaghetti ————-$0.95/ Php 47.75
  • 1 Chicken cube ————————–$0.10/ Php 5.00
  • 3 Cloves Garlic ————————–$0.10/ Php 5.00
  • 2 Tablespoon of Oil ——————–$0.10/ Php 5.00
  • 1 Tablespoon Butter ——————$0.20/ Php 10.00
  • Salt ——————————————-$0.10/ Php 5.00
  • Pepper ————————————–$0.10/ Php 5.00

Instructions

Preparation:

  1. Peel the shrimps and chop. Squeeze the Calamansi juice into the chopped shrimps.
  2. Dice bell pepper.
  3. Chop well the garlic into bits.

Pasta:

  1.  Put the 1.5L of water into the pot until it starts boiling. Place 1 chicken cubes and 1 tablespoon of oil into the boiling water and mash the cubes until it dissolves.
    • The chicken cubes will give taste to the pasta itself
    • Oil will not make it sticky
  2. Put the 400g Pasta Spaghetti into the boiling water for around 10 to 15 minutes depending on how you want your pasta until it is Al dente.
  3. Drain the Pasta Spaghetti and Put on the Side.

Sauce:

  1. Pan on medium heat, place the 1 tablespoon of butter and 1 tablespoon of oil, wait until the two mix in together and place the chopped garlic together with the bell pepper.
    • In order for the garlic not to be too burnt.
  2. When the pan gets aromatic with the blend of garlic and pepper, put the 100g chopped shrimp into the pan and saute well until it gets cooked.
  3. Put the 250ml Nestles Cream into the pan and put a pinch of salt and pepper to taste and mix.

  1. Place Cayenne Pepper (Optional for spice)
  2. Place 3/4 cup of Water and mix until it boils.
  3. Put the Pasta into the Sauce Pan and Mix well until all pasta is covered with Sauce.

Plating:

  1. Cut 1 Slice of bread into half diagonally.
  2. Place Serving of Pasta and place the 2 cuts of bread on top.

Voila! Perfect for a lazy rainy dinner or even lunch while watching at home! 🙂
